Buffalo Cauliflower


I can't remember where I saw this recipe now, but it's a good one! I typically keep all sorts of frozen vegetables in my freezer so I can just pull out a handful when I need some extra depth to a meal. For this side dish I mixed together about two cups total of cauliflower and brussels sprouts. I defrosted the bunch and chopped into bite-sized pieces. Next, coat the veggies with 2 tablespoons of buffalo sauce and then roll in bread crumbs. Roast in the oven at 400 degrees for 40 minutes or until your desired texture and enjoy!
