Not sure what inspired this mixture, maybe it's that Jiffy mixes are 68 cents at the store, or that I love cornbread, or that this recipe contains veggie sausage, but it's all fantastic. Plus, this would be an easy side dish for a picnic (or girls night) or for a simple dinner at home.
What you need:
1 box Jiffy cornbread mix2 jalapenos
2 veggie sausage patties
What you do:
1. Mix cornbread according to directions.2. Add jalapenos and sausage, mix well.
3. Pour batter into well greased muffin pan (I made mini muffins) and bake for 8 to 10 minutes. Serve warm with butter.
